Serve this beautiful golden rice with Tofu Brochettes or with steamed vegetables. Basmati and jasmine are flavorful long-grain rices that are sold in natural food stores and some supermarkets. Regular long-grain brown rice could also be used.
- 1/4 cup vegetable broth
- 1 cup dry brown basmati rice
- 1/3 cup slivered almonds
- 1/4 teaspoon cinnamon
- 1/8 teaspoon ground cardamom
- 1/8 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/2 cup golden raisins
- 2 cups boiling water
- 1 cup frozen green peas, thawed
Add almonds, cinnamon, cardamom, ginger, turmeric, and salt. Cook 2 minutes, stirring constantly.
Stir in raisins and boiling water. Cover and simmer until rice is tender and all the water is absorbed, about 60 minutes.
Stir in peas just before serving.
Per 1-cup serving: 223 calories, 5.4 g protein, 37.7 g carbohydrate, 8.6 g sugar, 6.4 g total fat, 25.7% calories from fat, 5.5 g fiber, 218 mg sodium.
