I really love to see my patients eat lots of Beta-carotenoids because rigorously studies validate their roles in eye health, cancer and bone health to name just a few!
The Carotenoids found in plants scavenge free radicals and protect you from developing macular degeneration and cataracts. Other Carotenoids like Lutein and Zeaxanthin have anti-cancer properties and have been studied for decades. What really excites me about kale is that the carotenoids in the "healing" leaves protects you against BLUE light waves that emit from your computer, video screens, cell phones and alarm clocks. This damaging light contributes to eye degeneration.
If your lab testing shows you are low in Vitamin K, then Kale is your answer as it contains 547 micrograms per one cup serving of vitamin K. Vitamin K is needed in bone mineralization and it can reduce fractures in osteoporotic individuals. Kale contains all 9 essential amino acids, which makes this a very good food for vegans and vegetarians. If you need a protein boost before a work-out or your immune system is not up-to-speed please consider trying some KALE!
If laboratory testing shows deficiencies in your omega fatty acids, kale is one of those vegetables that can deliver! It has more omega-3 fatty acids than omega-6 fatty acids, which is rare among vegetables!
Medicinal Kale Chips
1/2 cup of soaked sun-dried tomatoes
1/2 cup raw cashews
2-3 garlic cloves
1-2 TB lemon juice
1-2 TB nutritional yeast
1/2 tsp. sea salt
Soak your sun-dried tomatoes and cashews in filtered water for several hours.
Save your sun dried tomato water for later use!
Wash and dry your Kale and break it into bite size pieces.
In a Food Processor chop up the garlic and add all the rest of your ingredients. At this point you may need some of the tomato water to blend the sauce.
Spread the sauce all over the kale pieces and place in your dehydrator for several hours. I keep my dehydrator at 112 to 115 degrees as not to kill the life-force enzymes in the Kale for about 5 hours, but check often for that crispy taste!
