One of my favorite medical foods is Parsnips! If my patients had low red blood cell levels, or low potassium or no energy I would always prescribe a food or recipe to go along with their medical diagnosis and treatment plan. Food is always the best choice for chronic disease as long as the food you are eating is from the Organic Plant Kingdom!
Greens and veggies have a super power that most people have never "tapped" into! I am not talking about a salad but more like 2-3 cups of veggies and greens at meals. Eating way more veggies than a vegetarian! That's when food works as medicine! Be your own FARMACIST! The best thing is you can control how it is grown, the soil and the water quality if you establish your own organic garden!
6 ounces Organic Parsnips
6 ounces Organic Potatoes
1-2 Organic Carrots
3 Organic Scalllions
1 Organic Lemon
1 Pasture Raised Organic Egg
1 Organic Apple
2 TB Ground Cinnamon
1/2 Cup Organic Probiotic Plain Yogurt
2 TB Walnut Pieces
1 Tsp Horse Radish (optional or any herb of your choice like Basil, Cilantro)
Salt & Pepper to taste
Coconut or Olive Oil for cooking
Prepare the ingredients
Heat Oven to 250
Peel and Food Process the Parsnips, Potatoes, Carrots
Trim the ends from the scallions and thinly slice the scallions and keep the wite and green parts separate.
Zest and juice the lemon and keep separate
Make the Latke seasoning which is gluten free flour and sumac. About 1/4 cup or so.
In a large bowl wisk the egg and stir in the Latke seasoning blend, potatoes, parsnips, carrots and 1/2 tsp lemon zest and white parts of the scallions. Season with 1 tsp salt and pepper.
Cook the Latkes
Make patties and cook in frying pan over medium heat until crisp and golden about 5-6 minutes.
Cook the apples
Cut the apple into quarters and slice in the food processor. Add apples to the frying pan and a little oil and heat. Add the walnuts and cinnamon and hear together for about 3 minutes.
Add the horse-radish or herbs to the yogurt and stir together.
lATKES Patties are put on plate and add the yogurt sauce on top. Sprinkle the green part of scallions. Serve the apple mixture on the side and enjoy all the healing ingredients of fiber, vitamin c, vitamin K, and Potassium found in Parsnips!
