RAW Cheese CakeThis recipe is raw and made with highly nutrient dense ingredients. It is high in protein, good fat, and loaded with antioxidants. What's more, it oontains none of the negatives or refined sugar found in traditional dairy cheesecake. Ingredients Crust 1 cup walnuts 1cup pine nuts 1/2 cup pitted dates 1/2 cup unsweetened coconut Filling 31/2 cups cashews (soaked 2 hours and drained) 2 cups fresh or frozen blueberries 3/4 cup fresh lemon juice 3/4 cup raw unflitered honey 3/4 cup raw coconut butter 1/4 vanilla bean or 1 teaspoon pure vanilla extract 1/2 celtic or Himalayan salt Making the Crust Place all crust ingredients except coconut in food processor with “S” blade and process until crumbly. Sprinkle coconut onto the base of a spring form pan, pie plate, or 8x8 square Pyrex (coconut keeps dough from sticking). Press mix evenly into pan to form a crust. Prepare the Filling Place all filling ingredients in a powerful blender like a Vita-Mix (Most regular blenders won’t be able to process this filling. You could use a food processor, but it won’t make it as creamy.) Blend until smooth and creamy. Pour onto crust, tapping to remove bubbles, and make sure pie plate is filled evenly. Cover and place in freezer until firm. When firm, if using a spring-form pan, remove and place on a serving plate before cutting slices and return leftover to freezer. If in a pie plate or square Pyrex, after removing slices, return to freezer in container. Keep covered. WHAT SHOULD I EAT?Recommendation for Healthy Living and a Healthy Body! Be careful about the carbohydrates, fats, and proteins that you eat. Carbohydrates are the sugars and starches contained in plant foods. I do not recommend the carbs found in sweetened or sugared foods such as breakfast cereals, blueberry muffins, cookies, ice cream, and flavored coffees etc. The carbohydrates I eat are those found in high-fiber fruits, especially berries, vegetables, nuts, seeds, and some legumes. Fiber is the indigestible remnants of plant cells found in vegetables, fruits, whole grains, nuts, seeds, and beans. Fiber rich foods take longer to break down and are partially indigestible, which means that as these foods work their way through the digestive tract, they absorb water and increase the elimination of waste (such as toxic hormones) in the large intestine. Here are examples of what I want you to eat for carbohydrates: Berries, Fruits with edible skins, citrus fruits, whole non-gluten grains (guinoa, millet, amaranth, and buchwheat). Carrots, green peas, cucumbers, zucchini, tomatoes. spinach and micro greens. These high fiber foods immediately improve your digestion and begin to "starve off" the potentially harmful microorganisms in your gut. Water!!! Pay attention to the amount of pure water you're drinking. The goal is half ounce of water for every pound of body weight. Consuming highly pure, natural spring water is an ideal way to enhance the delivery of nutrients and facilitate the removal of waste. Meat and Poultry Meat should be greenfed, wild, pasture-raised, or grass-fed. I do not recommend anyone eat biblically unclean meat. I do not recommend fried, breaded chicken or processed lunch meats. Eggs All eggs should be certified organic pastured-raised. Fats and Oils (organic) flaxseed (not for cooking) hempseed oil (not for cooking) extra-virgin olive oil (best for cooking) coconut milk/cream avocado I would not consume sesame oil, lard, soy oil, sunflower oil, any partially hydrogenated oil, peanut oil, margarine, safflower oil, corn oil, grapeseed oil, shortening, canola oil, cottonseed oil. Vegetables (organic grown) Leafy greens (kale, collard, broccoli rbe, mustard greens, etc.) Sprouts (broccoli, sunflower, pea shoots, radish, etc.) Sea Vegetables (kelp, dulse, nori, kombu, hijiki, etc.) Raw, fermented vegetables (lacto-fermented only, no vinegar) artichokes (French, not Jerusalem) Squash (winter or summer) tomatoes, peas, onion, eggplant, carrots, cauliflower, broccoli, asparagus, brussels sprouts, celery pumpkin, okra, peppers, lettuce (allvarieties), micro veggies (hydroponically grown), beets, cabbage, cucumber, garlic mushrooms, string beans, spinach. Beans and Legumes (organic and soaked or fermented are best) Lentils Small amounts of fermented soybean paste (miso) as a broth There is concern in the research about consuming soy, kidney, garbanzo, tofu, navy, lima, split tempeh, black, white, pinto. At this time I am not recommending eating these foods. Nuts, Seeds, and their Butters (Organic, Raw, or Soaked are Best; chew well) almond, flaxseed, hempseed butter, hazelnuts, brazil nuts, tahini, sesame butter, pumpkin seeds, sunflower seeds, sunflower butter, macadamia nuts, chia seeds, pumpkin seed butter, hempseed, almond butter, pecans, walnuts, cashews. I am not recommeding honey-roasted nuts, peanut butter, peanuts. Fruits (Organic Fresh or Frozen, but no more than two servings per day and always eaten with healthy fats) Condiments, spices, seasonings, cooking ingredients, and salad dressings, (Organic) Beverages botanicallly infused pure spring water with low total dissolved solids culutred beverages (SueroViv, kombucha, and kvass) coconut water (must be raw and not packaged) herbal teas (organic) raw vegetable juice (mostly green with beet or carrot juice- maximum 50 percent of total) I do not recommend alcoholic beverages of any kind pre-ground commercial coffee fruit juices sodas chlorinated tap water natural sparkling water, no carbonation added Sweeteners Honey in small amounts Maple syrup, stevia, lo han guo, in small amounts Final thoughts, I would restrict foods such as pastas and breads but make up for it in foods you can enjoy. Avoid unhealthy fats and proteins that have deleterious effects on the body. To avoid the protein known as beta casein A1, which causes dairy intolerances in many individuals you will need to purchase your dairy from Beyond Organic Farms/cattle.
