It is currently being studied as a dietary supplement that has an approach to ameliorating deficits associated with aging and neurodegeneration such as those seen in Alzheimer's Disease. A study was done to investigate the effect of coconut supplementation directly on the part of the brain that has "difficulty" in the brain of the Alzheimer patient. What researchers found out was adding in the coconut oil showed that the neurons survived and were "rescued" from the amyloid-B peptides or brain tangles that we see on the MRI's of Alzheimer patients. The results of this pilot study provide a basis for further investigation of the effects of coconut oil, or its constituents, on neuronal survival focusing on mechanisms that may be involved. This is just one of many studies involving coconuts. I adapted the recipe and added even more molecular POWER to the recipe. I added in zucchini, white beans & acai powder. The kids don't know it or taste it, and the healthy fat is balanced with healthy carbohydrates, protein and a good dose of anti-oxidants! Zucchini is a great source of dietary fiber that reduces constipation and offers some protection against colon cancer. Zucchini is rich in poly-phenolic anti-oxidants that are so good for your brain health and its folate level is critical for DNA synthesis and cell division. I used white beans because they are a healthy fat-blasting resistent starch which means they are a healthy carbohydrate that boost metabolism! Acai is such a cool superfood because it not only has anti-oxidants but also has amino acids, omega 3 fatty acids, vitamins and minerals and more protein than an egg depending on the dose used! Coconut Strawberry Bars Pie Crust 1 and 1/2 cup of Organic Almonds 2 cups or more of Dates 1/2 cup coconut flakes pinch of sea salt Mix in Food Processor until it sticks together and press in pie plate or cake pan. Place in freezer for a few minutes to help set. Strawberry Filling 1 cup of Coconut Cream Concentrate 1 cup of white cooked beans of your choice. (I used Northern White Beans left over from Sunday Brunch!) 1 cup of Zucchini ( I had some left over from Sunday's Zucchini Bread) 1 cup of mixed fruit ( I used mostly strawberries, mango, and peaches as these are the acceptable fruits I can use based on Alcat Testing) 1/2 cup of raw organic honey juice of one organic lemon (juice in your juicer) 1 full tsp of lemon zest 1 tsp of vanilla extract 1 cup of filtered water Dried Coconut flakes ( Add as much as you like to taste I used 1 TB!) 1 TB of Acai Powder ( you don't need this but I like to increase the anti-oxidant power!) Blend it all up in your Vitamix Blender. You have to adjust water and sweetness to consistency and taste. Blend and Taste, Blend and Taste! Freeze to harden and serve! You could use organic yogurt if you do not want veggies and beans! You may have to decrease the honey and water if you use the yogurt. I changed the coconut cookie recipe in the video below just a little bit from the Tropical Traditions video. I did my cookies in my Vitamix Blender so it would be mixed really well and have a little bit different consistency. I also added in some Carob and Coconut Flakes to make some of them a chocolate almond bar flavor. My cookies as you can see from the picture above are shaped in small cookies for the kids and are really creamy and so good! I keep them in the freezer and the kids eat them right out of the freezer! They are so filling they only eat one and they are getting those healthy fats for their brain! |
