Brea is home from her first year of medical school & we are still celebrating Sierra's graduating college with Biochem Honors and starting med school in July! Both my girls seem burned out & exhausted so nutrition is a top priority these days for me as I get them re-stored and re-energized! Since they are going to be doctors I am making triple sure they have downloaded the food to disease! connection! This morning I decided to make Ancient Gluten Free Quinoa Flakes, hot cereal with flax seeds, chia and probiotic filled kefir! Quinoa flakes are made from pressed quinoa and you get all the healthy benefits of quinoa with a more familiar breakfast texture and a quicker cooking time.To sweeten it up I used Organic strawberries and bananas with my new favorite "SC Mountain Man Spun Honey with vanilla & lemon My girls initially started eating this ancient food when they spent a year in South America volunteering with Medical Ministry International, during college. Quinoa flakes are naturally very low in calories, are very low in fat, and are cholesterol-free. You can find them in most grocery stores that have a healthy food section or carry organic products. Quinoa is a seed that is cooked like a grain, and it has been consumed for thousands of years in South America. What I like about it the most is it is so versatile. You can use it in smoothies, cakes, grind it to a powder, or use it to make cookies. The flakes just give you a quick option in the morning! Quinoa has all the essential amino acids, is high in the B-vitamins, is gluten free and has vitamin E and some iron which all young women need! Older women will love the calcium in Quinoa as well as the fiber! Medically what I like about using Quinoa is its soluble fiber content. I like to recommend patients consume "soluble" fiber as well as "insoluble" fiber every day. Soluble fiber is good for diabetes and helping to control blood sugar swings. The antioxidants in quinoa will help control the inflammation from elevated blood sugar and also help heal the damage elevated sugar does to the blood vessels. Studies have also shown quinoa will help lower bad cholesterol! So experiment and try it for a nutritious breakfast that is fast and easy and gets you going! 3 and 1/2 cups filtered water
